I don't think they ever used helmets with horns. The foot soldiers could use normal helmets and less shiny robes. The winged helmet from the picture is fine for great generals or cavalry. Maybe the general could also be a mounted unit?
 
I like the units. Even more german unique units. ;)

However, did you make enquiries about the prussian eagle, which you used on some shields? As far as I know it was only used centuries after the teutonic order, while the teutonic order only used the black cross as their sign. I don't mind very much, I do just mention it for the chase you are a perfectionist and you want it 100% exactly. :)

As impractical as it seems, they do seem to have worn these things into battle and not just for ceremonial occasions:

These helmets inspired the myth about Viking horned helmets, because Wagner, in his operas in the 19th century, portrayed Vikings in medieval German gear.

Technically speaking, members of the Teutonic Order were not supposed to use any personal heraldry or crests at all. However, as you can see from the depictions above, this rule was regarded as 'made to be broken'!

As to the Prussian Eagle itself, it is unlikely ... they would not have worn nationalist emblems because they simply didn't think in those sorts of terms. But eagles, wolves, bears and other animals did appear on personal heraldry.
 
Heraldic crest like the ones from your pictures are perfect for the noble knights and the GG. These things are made of metal and colorful feathers and not cowhorns.

I agree, only the leaders wear such expensive stuff. The helmets of the footsoldiers were much more simple. Maybe like the one in your third picture.
