i been playing civ for a while when in the begining i get a settler and a warrior (set of 3 men). Now when i play i get 1 settler and one warrior(set of 1 man). Why is this? I like the 3 men = 1 unit. How do i change back?

See the "single unit graphics" in the graphics menu (or something like that). You can have 3 men for most units, or just 1 man (i.e. 3 warriors or 1 warrior, it's still one unit in gameplay). This is so you can have better or worse graphics depending on your computer's abilities.

However, I think that even with single unit graphics turned off, if you select multiple units, you'll only see one of each unit (up to a maximum, I don't know how much). So you probably ended up selecting both the settler and the warrior, or you just changed your graphics settings.

No, except for insanely high numbers of units, everyone is visible. If you have three-unit axemen and select a stack of four of them, you'll see twelve axemen.

Anyway, yeah, just a graphics option for less powerful computers.
