Because when going for a RV, more cities make it harder to get the 50% religious spread if you keep every city you captured.

I think I understand.... I suppose you only should raze cities in with a majority of followers of rival religions?

Exactly, you just have to keep an eye on the amount of your cities and how much of them follow your religion. If you start with a core of ~7 cities you can at least keep the better developed/close to your starting position cities.
