I have been playing a game for about 2 hours now and the AI hasn't declared war on me. I am playing Regent, world map standard, AI moderate.
1. Why hasn't the AI attacked me? Can they be intimidated by my technology ( I am very advanced compared to the other civs) and size of army?
2. Can i change AI aggresiviness during gameplay? If yes, how?

Yes, the ai knows exactly how strong you are and will act towards you accordingly. It's basically strength of units, so the tech only affect it indirectly.

No, there is no way to change how aggressive they are DURING the game. Of course, you can set the level before you start....

Demand stuff until they are furious with you then tell his troops to get off your land, They will declare war on you (NOTE:this trick only works when AI troops are on your territory ;) )

Short of not wanting to break a 20 turn deal, or potentially for the WW boost, I'm not sure why you would want them to attack you. I'd much rather have the war begin at the time and place of MY choosing.

Don't you ever get an "itchy trigger finger"?

I find that when i stay militarily stronger than them, they leave me be... which does make sense. (And staying stronger is doable at Regent.) They generally only make those extortionate demands when you're weaker. I'm not sure if they consider tech levels as part of this comparison - sometimes they'll demand a tech, apparently attempting to catch up...

But sometimes one will demand something when i'm clearly stronger -- it feels so good to call their bluff, then instantly demand something of them, and they give it!

It's either F7, F8, F9, F10, F11, or F12 (I forgot), but one of them shows Victory Conditions and a Histograph. Look on the one for "Power". It shows you how much power you ahve in comparism to other civs.

F7: Wonders of the World.
F8: Victory Conditions/Histograph.
F9: Palace.
F10: Spaceship.
F11: Demographics.

Really? I've never had it happen to me. I've always wondered whether that "blackmail option" is something more then just some one-sided AI entertainment (yep, I sometimes give in  ).

Are there others who demand successfully from an AI? How strong do you have to be compared to that AI knowing the AI can be quite suicidal at times.

One of the ways to determine if you can 'demand' stuff from an AI is when you are negotiating RoP. If the AI is willing to give you stuff (and it has it, and you have not broken a gpt or trade deal) then you probably could demand stuff. Watch out, though, because the AI will have 1 pt against you for each time you make a demand.

As for DoW not occuring early, this has been something that I have noticed in C3C. The AI seems to wait until somewhere in the middle of the MA's before it starts wars (not always, but often). Usually, by the time the mid IA comes around every AI is at war.

This could be due to the AI not having the maps anymore, so they don't know where to attack, etc. Map Making no longer allows the trading of maps, so it may be the Astronomy tech that kicks in the warlike nature of the AI.

No. The AI gives you something for a RoP if you have more land than they, but that has nothing to do with "power" directly which they consider if you demand something from them

I never knew til recently, either; i read about someone else demanding something from the AI, and i tried it, and it works sometimes.
But it feels wrong, somehow, like taking candy from a baby; i suspect it works when you're stronger.... and i don't like feeling like the playground bully. (And yet i do it just before declaring war; go figure.)
