Playing a standard earth map, which I edited to put 18 civs where I wanted, including my Israel (Esnaz's Israel Mod) starting in the middle east. It may not be very balanced ... that's in question four below.
I seek wisdom from the community. I feel that my game is at a turning point ...

1) I just took Thebes from Egypt. It is one of the top five cities, with lots of Culture and GP. I don't understand game mechanics on City Culture in this situation ... after the X number of turns of revolt, will all the Culture buildings in Thebes start producing Culture for me?
2) Egpyt would be a vassal at this point. I hesitate to do it only because I fear that--if I don't take the other Egyptian city south of Thebes--then Thebes will always have too much Egyptian influence to grow for me. Should I take Egypt as a vassal?
3) What strategies can I use to slow down or stop China? Shall I send my Knights to do battle with their Cho-Ko-Nus? Spies all over the place? Out-tech them by taking over other civs? I feel like they need to be slowed down, but I don't know how to go about it.
4) I made this map because it seemed fun. But the three games I have started are all being won by China. Why? Luck? Or is there some advantage to China inherent in my setup?
