Can I keep Wonders after captured city?

You can only reduce flip risk.Conquer/raze cities around to avoid foreign tiles in city radius, starve population in the city as fast as possible and put in a lot of units.If you manage to wipe out the rest of the civilization to which the city belongs, there is no more flip risk...
 
You know, there's this wonderful program named FlipCalc. This program can calculate the possibility of a flip, and the number of units required to prevent that flip.

In this case, if you manage to get the (foreign) population down to 1, and the city is exactly halfway between his and your capital, you'd need 20 units to stop a flip. Maybe a better way is to increase your own culture. For example, if the AI would have a culture of 10k and you'd have a culture of 9k (thus the same 1k difference), you'd only need 3 units to prevent a flip.
If you're going on a rampage and are planning to conquer some cities, it's a good idea to build some culture in advance. Since all cultural buildings have some beneficial side-effect (like, increasing science of happiness ;) ) it's never a loss.
 
You can take all the measures to prevent a flip, but it may be wise to just keep troops on the tiles around the city to recapture it after a flip.

Cut roads to the civs network and then raze surrounding cites. Unless the wonder is Suns or Leo or Sistine I would reconsider keeping it.
