What is the maximum number of cities before corruption increases on each map size and is it worth not building more cities when that number is reached?

1. it does not matter how much cities it has it matters how big is your empire. the ones at the tip of your territory are likely to have the most corruption.
2. to get rid of it try to build courthouses or build a forbidden palace. or set a new city with a palace.

It does indeed matter how many cities you have. Corruption and waste in a city comes from two mostly unrelated sources. One is the distance from your palace (or forbidden palace), and the other is the number of other cities between that city and the palace.

Corruption due to the second source grows much faster when the number of cities in your empire has passed the "Optimal Number of Cities" number. This number is higher with larger map sizes. I don't remember the numbers, but I belive it's 24 on a standard map. The number can be set (and viewed) in the editor.

Check out the excellent thread: http://forums.civfanatics.com/showthread.php?s=&threadid=19922 when you want to learn more about corruption.

12,14,16,24,32 as the map sizes increase

Added following to answer rest of your question:

Is it worth it to build more? Depends on your goal. Pretty much required to win via domination. Can help with culture wins, but becuase of very slow/costly builds the additional cities won't help much. Can help with conquest by denying the land for other countries to build on. If trying for high scores, it is pretty much required as well, as the additional territory and workers adds to the score. Doesn't help much with SS or diplomatic victories.
