Here are the war strategies at the beginning for the 3 of the main countries:

Spain:Quite Difficult especially on harder levels, take Portugal and Gibraltar first, then against france sign alliances against them with prussia,austria and the ottomans against france. Strike at Montauban as it is never overly defended, then move on to Bordeaux. Take the southern strip of France by taking the two cities I mentiones and Marseille, Turin and Valence. Then begin to attack Austria.
France: Easily build some vet imp. cav. then put them into your armies, invade dutch, take the KoN, then I usually target Spain as they are weakest or you can target Prussia. Always keep northern area defended as Britain will ship over if you don't stop them. If you take Spain advance into Portugal and Gibraltar.
Ottomans: To me these are the hardest civ you can play without modding, which effectively is true of the time, they did never get invaded by Napoleon, but at the time they were a declining civ which definitely shows in this conquest, poor units help you to struggle. I usually take KoN before France does, by blocking France off from reaching by land then invading KoN. I then usually invade Southern Russia early where they have huge corruption and not many units due to bad infrastructure at the beginning. Although your cities are probably worse, you can just about invade up to and including Kiev and Kharkov. Usually from then I get stuck, when I done this I was successful up until now but then Austria and France signed alliances with Russia against me and just overran me as I had no allies, Denmark had been invaded by Prussia, in return Prussia had 2 cities Danzig and Konigsberg, the rest all belonged to France except Leipzig and Posen which Austria owned. France had invaded all of Spain, Dutch, Portugal. Sweden had fallen to Russia, all that was left for me to sign alliances with on mainland Europe was 2 city Prussia. Oh yeah and Gibraltar was there as well, no help though. Britain hardly ever have any impact in the ending of the game. With all this the Prussians who I signed alliances with so I could distract the enemies and prepare my units, though within 5 turns France took Danzig and Russia had taken Konigsberg eliminating Prussia, by now I was done for. Remarkably 10 turns later Austria took Gibraltar. So by then I had lost around 4 cities, still battling, but Sipahi and Janissary are no much for Imperial Guards from the west where I had Janissary defending, Hussar from the North with the odd Danish Cavalry where I had Sipahi. Then Russia on the east where I had about 6 Janissary there and 8 Sipahi, not well defended at all, Guard's I think are the most cost effective of the elite units, and Russia by end game can pump lots of them. Very hard to tackle. Trust me a game with the Ottomans is very hard
