I'm currently playing a game on Vanilla, on deity difficulty. I'm doing okish, as I'm about level with the rest of the world in military and territory, but I'm about 6-7 techs behind in the middle ages. I had the great library, which helped me stay in touch with the rest (stole it from the Romans just after they built it) but now I'm falling behind pretty fast. Any ideas on what to do at this point? I've tried to trade gold for techs but no matter how much I offer the other civ never accepts the offer.

Tiny map, pangaea 3 other civs (though I reduced Rome to a city-state on an island), I'm Zulu, Russia and Germany are the two other civs.

Amass troops. Declare war on someone. Grab a few cities. Sign peace and extort everything you can. Then repeat the process with someone else. Then you probably win by domination and you no longer have to worry about techs :D

I did the that to Rome and Russia but the problem is that its the techs on the line of Invention - Gunpowder - Chemistry that I don't have. So declaring war and making peace is only getting me one tech at a time; and I'm guessing that the other AIs are nearly at the Industrial Ages, which means maybe Riflemen. And also one very irritating thing is that I don't have horses, so its my swordsmen against possibly quite soon cavalry. Which is just silly.

Difficult, but not impossible.
With your lack of resources, i suggest going with the medieval flavour of the "poor men's army". Swords and pikes. Lots of them. They are cheap. Send a good number and you'll win anyway.
Cannot say much with the info you provided, but if you post a save someone (me included) can give some useful advice.

Heres the game save, if anyone wants a look. It's just plain vanilla by the way.

You look to be in decent shape to me. I would stop those 2 workers clearing jungle and send them to road toward the site to get the horses. Nearly 50 turns to clear the jungle is not useful, but getting that settler moving and connected is valuable.

Then you need to trim Germany before they are too strong. When they hit the next age and get a free tech, they will be nasty.

Sell of that wall in the cap, it will be useless anyway. Try to get some more shields in the city and a market for extra gold. Truth be told I never have played on a tiny map and only once on a small, but I am wondering if republic is the way to go on this map?

This game is probably not going to get to arties, he is making cats, but production is not high. Numbers are good, up to a point. Having faced civs with 500 spears/archers and some horses on sid with Pikes and musket armies, I can say numbers can only go so far. Those units died like flies on zapper unit. I have had big losses trying to take cities down with inferior units as well.

Bombardment units can make up for quality, but you need them in quanities.

Thanks for the help. As for getting a great leader, I'm not too sure whether declaring war at the moment could help, as I need to consolidate what I've got, and build more cats. I just ended a war with Russia, and in that, of the 2 cities I took, one flipped (after all the effort to get it) 4 turns afterwards, and the other I razed, as I only had an Impi defending it.

So are there any ways to increase the production then?

If you had Nationalism you could mobilize.

I don't have the game in front of me right now, but iirc you had mined most of the tiles that made sense to mine. That leaves getting more pop to work more tiles, until you get either GA (probably alrady), Mob, or rails.
