I'm new here... Where do I find the settings such as map size, difficulty etc.?

You can see the early polls that decided those things here. (ones like landmass, world size, difficulty, etc.).

Civ: Japan
Map Size: Large
Barbarians: Raging
Climate: Random
Age: Random
Temperature: Random
Difficulty: Monarch
Land Mass: Random (random water coverage too)
