Besides when you first build an Embassy how do you get information on the Enemy cites and wonder status?

Use the "espionage" button.

There is a little "E" in the bottom right hand corner of the screen that lets you access the Espionage menu. I think Shift-E does the same.

Hit F7 for a wonder summary for every civ. Better yet, try to find the handy Civ Keys reference guide for all the key features. It might be in the tutorials section of CivFanatics.
