How exactly do they work, if you have 4 horses that means you can only make 4 horse-mounted units?

And for trading horses, is it possible to trade just one, or does it need to be a bunch?

It's an abstraction of the game. Or you could hook up 1 horse resource and get unlimited riders in previous Civ games.

The answer to your questions is yes. Trade 1, trade many. One resource builds one unit.

I'm not sure how to trade 1 horse though, only thing I can manage is multiples

You can adjust the numbers in the trade box.

Yes, the default amount is 5. But lets say you have 6 horses and built 5 horseman. The AI will still trade for your 1 horse, usually in a package of other things.
