how do attack/defence points work on units?

Lets say a hoplite with a 1.3.1. attack/defend/move. How does it work, if it attacks, it has a 1-point damage. But does it have a 3 defence if it attacks, or does it only have a 3 defence if is attacked? regular spearmen are killing me when i attack with hoplites, so i assume that hoplites only have 3 defence if they are attacked is this true?
 
Yes, the defence only kicks in when you're attacked. In general you only want hoplites as city/worker defenders, or to defend your swordsmen/bowmen.
 
It's all in comparison. Let's say an archer, 2-1-1 attacks an hoplite 1-3-1. Because the archer is attacking, we look at it's attack value ; 1. The Hoplite is defending, so we look at it's defence value; 3. The archer has 1 out of 4 (1+3 from the hoplite) chance of winning. So in 25% of the time the archer looses 1 HP. Then it continues till someone has no more HP. Then you know who has won.
If an hoplite attacks an archer the hoplite has 50% chance of winnig; 1 out of 2 (1 attack from H + def from archer).
That's not all; a defender can have bonusses for terrain and state (fortified or not). And of course, the more hitpoints you have, the longer time you have to get the odds on your side.
