how do you stop building

can anyone tell me I doing fine until I rin of of space to build cities then I have plenty og gold then the game seems to control and starts builing palace and temples which i dont need or wand and cost me gold is there anywhere in the game I csn stop this happening I have tried using the governer bit but hasnt work

When you're finished building, and you don't want any more units, you can set the city to wealth. That way it produces money.
You can also check if you can make some citizens a specialist to get more gold/science output. There are some very nice articles about this in the war academey on this site.

Weird question : In User Preferences, select Always Ask build Order (or something like that).
When a production is done, you have a pop up to inform you, then you can drill into the city and select your production.
