According to the Civlopedia, and to (my unmodified) Editor, Iron is a required resource for building Pikeman. (So is the Feudalism advance.)

Perhaps you are playing with a modified Editor where the iron prequisite has been removed. Check what is says under Pikeman in the Civlopedia.
