I am trying to unlock this achievement.

Herculean Effort
Complete all International Projects in a single game as the highest contributor.

How many projects are there?

What are they?

How do I get them all to appear? Are they sequential (one appears after the previous is finished)? Are they only available in certain eras?
 
There are 3. Worlds Fair, International Games, and International Space Station. They have to be approved by the World Council. I have yet to see ISS, the game just doesn't last that long.

The Games opens at Radio. ISS opens at Satellites.
 
through World Congress you may (pick and) vote for resolutions World's Fair, International Games and International Space Station. if this resolution passes, you may contribute to build it.
 
They should all show up in in the world congress screen. Probably the civilopedia somewhere too.

I think there are 3. The International Space Station, the International Games and a third one whose name I forget but grants a culture boost to the winner.
 
Few tips

1. If you want to get them but don't want to jeopardize your whole game to get them drop a difficulty so you can be comfortable at knowing you can still win the game you gonna play but can side-track your strategy in order to get it

2. When the resolutions passes, focus EVERY city (and the reason for my first tip) on the World's Fair (which is located under the Wonders section in building list, along with Research and Wealth).

3. It's not a bad idea to optimize, and get either a production focus, and just get as many hammers as you can.

4. Don't bother with trying to tip off and bribe civs into voting Yea, they will vote Yea.

5. You need to be the top contributor for the projects and win the 1st prize three times in a single game to get the achievement.
 
Another option while trying to get this achievement is play a space (science) victory game only. The ISS will then be available before civs can complete a spaceship.
 
If you only enable diplomatic victory only, it makes it more likely you'll be able to do all three before someone wins through another method.
 
Ignore people talking about winning, you can always do the one more turn option if you win before completing the projects. They don't stop being available if you win.
 
6. Make sure you have only little culture, otherwise the doubling effects from being top contributor may make you win culturally easily before the ISS comes up.

You're talking about International Games aren't you... Double culture is just plain awesome unlike double tourism, I had over 1000 culture/turn from 4 cities with no puppets.

But it's a little bit boring if you've already won the game :( I know it's for an achievement though...

I'm not sure why you would disable any victory conditions to get this achievement. If you're going for a Science victory, then you're going to unlock Satellites and the ISS will be easy to build before you finish unlocking the rest of the techs for the space ship parts. If you're going for a Science victory, but you've disabled the other victory conditions, then that's kinda of cheaty, I think.
 
On avoiding winning to fast to complete the ISS; no worries; you can still get this one (& several others) via "one more turn" even after you've won.
 
Just go Settler difficulty + no barbs + tiny map+one city. 1 city? 2 workers on auto. Build whatever you want in capital. I guess this game will take less then 30 minutes.

The ISS requires Satellites to be proposed. So if you or anybody else researched Satellittes, you can propose to vote for the ISS.
 
Thanks for the information everyone. I was able to delay my victory long enough to get the ISS in my latest game. In addition to getting the ISS, waiting the extra time also allowed me to unlock the achievement Tear Down This Wall since I forced China to change from Order to Freedom ideology.

Only 14 achievements left before I have them all!
