Catapults. build lots and lots of catapults.
seriously, cats rock and will kill any stack thrown at you. Make sure to keep a large standing army even when you are not attacking. Unlike the AI, humans are relentless and will attack correctly with overwhelming force. Be ready to fight off serious invasions. Don't be surprised if you are suffing high costs for maintaining your army.

People don't react the same way the AI does. Misdirection works better, but preparation for war has to be a lot sneakier.
Expect much greater loss of units in war, and if you start a war don't stop building units until you're at peace again with a decent army again. And never stop building catapults unless it is to build cannon instead.
