The point is 36 citizens. No point in transforming trade specials (like silk and wine) to food specials (like wheat) if it gets your city past 36.:)
 
I should have added if you want more science or money... If you want a high score than it's good to get the city as large as possible.
All specialists your city has when it grows past 20 can be transformed to scientists or taxcollectors. Most of the science in my SSC ususally comes from scientists in late game. All specialists after 36 don't contribute anything. So after your city reach size 36, it's better to let them work trade producing squares instead of food squares, because trade still contributes to your city's science and money, which the extra pops don't.

This is the way I reason.:) Maybe I've missed some factor though?
 
Yeah, my Bombay SSC's pop level of 43 was boosted by Food Trade Caravans (one from each city works perfectly to balence it out), not converted food squares. I left all but one of the trade squares (half of it was the himalayian mountain mines, including a gold mine, and the other was silk which I converted accidentially before I understood that irrigation would do that) as it was. Dacca only had plains and wheat trade squares when I founded it.
