New Modder, totally lost

I'm looking to create a new Canadian civ with the following bonuses:

UA: Warden of the North: A Defense Pact with Canada will provide +4 Global Happiness to both civs. Food yield from camps increased +1.

UU: Mountie (replaces cavalry): Provides +2 local happiness when garrisoned in a city.

UB: Tim Hortons (replaces market): Provides +15% production.

I've laid down most of the XML groundwork for the civ, its cities, and leader excepting for the Trait (UA). However this seems to be where most of the tutorials leave off. From what I can understand this is the limit of what you can change with XML and that I'd need to write some Lua code to create the new interactions. However I have no clue where to even start to poke around and find functions, etc.

Could anyone help out or at least point me in the right direction for a good tutorial?
