When a city has more than one religions, it gives me the option of building each religion's temple, monastery etc.
Do you only get the benefits from building your state's religion buildings or if you have multiple religions does it add up cumulatively to build additional temples, etc?

You generally get the effect of both buildings. So a city with 5 monastaries gets +50% to its science output, as well as getting the culture bonus from each of them
When I was new to Civ4 myself, I didn't bother with monasteries. I adopted Org Rel ASAP so I could hustle my state rel's missionaries to the AI before they could convert to something else. Then I'd work feverishly on Wonders, & by the time I finished them & started focusing on spreading all 7 rels to my cities, I had already discovered Sci Meth & thus it was too late to build monasteries. That meant sticking with Org Rel for most of the game; once I got all 7 rels to almost all of my cities I'd switch to Free Rel, either via the civics screen or by passing the UN res to make Free Rel global.
Now that I'm a bit more experienced, I do build monasteries (for research & culture boost) & use Pacifism for most of the game (for GPP boost). At Settler I can easily take a break from Wonders once in a while & not worry too much about the AI beating me to them.
The +% science output and +culture stacks for EVERY ONE of the religious structures you build. So if you have all 7 religions in one city you could build all the religious structures and get a buttload of culture and science going.... Thats definitely one thing religion is good for.

Not all buildings, in order to build Cathedrals u have of minimum requirement X temples,and X depending on the number of cathedral u have allready builted.
