OK, hate to throw a monkey wrench, but here goes:
I do not like 1W of pigs OR 1N of cows. I think the choice should be between 1NW of pigs and 1W of cows. Why?
Pig city
If we build 1W of pigs, yes, we cover a desert square. However, in trade, we lose the grassland hill. This city will never be more than a prod city, covering the desert doesn't really gain anything but losing the grass hill hurts production. I would build 1 NW.
The only way I would consider 1W of pigs is if there is a food resource under the FOW W/SW of the pig (out of the BFC of 1NW of pig). How far can a settler see? If we detour him to a western shoreline, can he break the fog?
I could almost be talked into the blue circle location. It would bring the phants into the BFC and a plains hill. However, there isn't really enough food to work the plains hill and the phant might better serve the cow city. Also, settling blue circle would steal at least one forest chop from the capital (and waste a forest under the city).
Cow city
If we build 1N of cows, yes, we get the crabs. However, we also pick up 5 coastal tiles. Even with a lighthouse, these are pretty useless. This land is flatland, the city will never be more than a commerce city. Building 1W of the cows provides us 5 extra grass tiles for cottages. It also gives us the 'phants for some minor production. With all the grass, we do not need food from crabs to run all of our cottages. Matter of fact, with 13 grassland cottages, this becomes our third culture city if we decide on that VC.
Which city first?
1 NW of Pigs first because of all the jungle by the cows. Also, no reason to nestle our borders up with Senior Psycho. We can build the cow city third (if we decide against an early rush).
Cities 4 and 5
I still like Marble island for a later city. With two fish, it is a decent GP farm. If there is a third food under the FOW, we are golden.
I also see a decent secondary GP farm to the west. We can plop a city 2N of the rice and get cows, fish, and rice into the BFC. Assuming we keep Shaka's capital, the cows are not in its BFC anyhow.
