Sorry if this pretty basic but how do you stop the production of a unit, building etc? I have only tried playing the tutorials so this feature might be disabled.

You can't actually stop production, you can change it to produce something else.
Click on the city, and in the left bottom corner look for a button called 'Change production', and change it to w/e you want.

Over there

Well, once you research Education and/or Currency, you can transform your :c5production: hammers into :c5science: or :c5gold:.

You can complete the production of a unit or building later but inside 10 turns of waiting without losing hammers. After that you lose 2% per turn. You can switch every 10 turns and not lose a single hammer for the whole game. But in practice you don't want this at all. Can be useful to keep virtual units in cities(from 1 turn of completion, like an archer) and save maintenance that way. Or save cultural buildings maintenance right before Legalism.

For wonders, you never lose production.

That is wrong; production decay only occurs in CivIV, NOT CivV

I am fairly certain I have seen production decay on units. I do not explicitly remember seeing production decay on buildings (which isn't to say it cannot happen).

Also, you can always create new units or buildings and sell them upon completion if your intent is to keep maintenance low. Sinking hammers into a Wonder you don't intend to complete is also an efficient way to convert hammers into gold when you don't see value in your production elsewhere.

Check this for more infos. It's the last post from my units pre-building thread(a bit old tho). Things may have changed but i don't think so. From my experience it's always the case.

For the most part, you'll generally want your cities working on things. Is there any particular reason you're not wanting them to?

Here is the whole thread with some suggestions in it.
