What happens to units in the field when all cities captured?

If I capture all the enemy's cites and they still have a few units in the field between cities, what happens to them? Do they come over to my side, or keep the civilization alive?

Also, If one of my cities falls, what happens to my units that are supported by that city?

When you lose a city, you lose all the units out in the field that are supported by that city. so if you took out all the cities of another race, all his units are also destroyed. Unless they have NON units, then i dont know. i guess those will become barbarians, but its a lucky guess

If you're opponent is completely destroyed (you capturing all his cities) all of his units are erased, even NON units. This is because you destroyed the civilization.
