Not sure of whether to Mass my Armies to cleanse the heathen off the face the Earth OR to establish my economies. All I know is that I can't do both at the same time.

Once mass swordsmen cant get you any more cities, heal up and wait for catas and have a go again, then wait for knights and go again, and eventually riflemen/cavalry for the final kills.
