Windowed Mode Shortcut?

Is there a keyboard shortcut to change into and out of windowed mode?

No. You have to select Windowed mode at launch time. Hold down Command as you launch Civ3 Complete to open a dialog where you can choose display settings and other parameters before Civ3 itself gets going.

if you hold the apple button and hit H it will lower the window and let you multitask

That's not Windowed mode. Windowed mode is where you play the game in a moveable window, smaller than your screen, and you can overlap other applications on the game window.

ugh! i really wish i could do that right now...i used to have just civ vanilla for the mac, now i have complete and that window won't come up even if i press comman and open it...is there anywya ican get past that setting or something to force it to be in window mode..like a checkbox or something somewhere?

There's absolutely no reason why it should not work for you:

Hold down the command key. Then double click the 'Civilization 3 Complete' icon in the Finder window. Keep the command key (the one with the Apple symbol on it) pressed until the Civilization 3 Complete Preferences window appears. You can then select Full Screen or Windowed mode, and the size of the window, as well as a few other parameters.

There may be other ways to get at these parameters - it looks as though they appear in the com.aspy.civ3conquest.plist file for example - but I see no reason to experiment with that option when there's a perfectly good GUI facility to set them.
