Has anyone run into an issue with trade units where suddenly half way through a game you can't assign a unit to trade between cities or no cities show up to trade with? I've never seen this before.

Maybe for some reason you have all the check boxes unckecked and you didnt noticed or you were sanctioned during World Congress?
If you have set only current caravan, the city is not coastal, and yet you have set only water trade routes, that would be look like.
Honestly, a screenshot would be help :)

Your own, city states or other AIs?
Max one trade unit from city a to city b internally (other citys can also send to the same city).
Max one trade unit from your empire to an external cs or AI city.
But this sounds like a resolution went through.
No trades to cs when City state sanctions is up.
No trade to or from a sanctioned player/ai (trade to vassals is still ok).

World Congress only just formed and hasn't even voted yet. If I change the filter option sometimes cities will pop up. But it is weird because the list will include cities I am already trading with and even for internal ones it will include the city that the trade unit is operating from. When I go to look at all my active trade routes it doesn't even come close to listing all of them.

Just tried the updated france. They were fun for a bit until it got tedious managing the french swarm. I know there was talk about a QOL involving a way to move armies around. Was that ever implemented? If so where can i read how to use this feature?

So it is possible in this version, I've been at a lengthy war vs Iroqouis

It's a mod called "squad", check the sub forum

DLL with the city food fix. Not savegame compatible (won't fix already settled cities).

Considering the amount of mountains and other weird terrain it might be an explanation as to why the civilizations are so close together. Each city needs a few tiles to work etc and not just filled to the max with mountains, nobody likes that but the Inca.

Tried 2 spy mission steal GW that worked, and kidnap specialists - that doesn't work at least in city screen amount of GPP didn't change and number of turns to GP.

Yes. Happens sporadically and will eventually allow me to build a trade unit again, only to later not be able to build a trade unit again.

No obvious restraints causing this. There are clearly trade routes available but on the trade routes available screen it lists none.

None internal or external. There arnt barbs or enemy units blocking the cities. I have both stone works and granaries up for internal routes.

I can also confirm some weird trade route behaviour. Difficulties with recognizing coastal or land trade routes. A cargo ship that had options on land but they didn't work then.

Looks like this has already been reported. Has been tagged as a muktiplayer issue and i can confirm ive also only experienced this using a modpack in multiplayer.
