The best way to form a beachhead is to make an Open Borders agreement with somebody else on the continent. You can land troops as you wish in your friend's territory, and sometimes unless your enemy goes to war with your friend he can't even attack your units. Invading during a war is even better if you can arrange one.
Remember the war between the Spanish and the British? Why did Britain insist on fighting the Spanish Armada with a weaker navy, rather than letting them land and then fight their army? Because ships moved faster than men (his times are before astronomy, so no transports).

Overwhelming force is a mistake. To achieve overwhelming force you need to wait longer before attack. This gives your opponent more time to build defense.
I attack as soon as I can take and keep a city.
Four transports full of riflemen and canons (or better troops) is more than enough.
I take a good coastal city, and send my transports back home for refilling.
Better said : I heal my troops in my new coastal city, with a medic galleon in it serving as healer. One or 2 galleons go back home, the other 1 or 2 go to the next target city while frigates take away defenses.
I never wait for transports to attack. It's just too late = more costly.
