At the screen where you choose your civ, there is a button called game options. There you can change the number of turns before the game ends.

BTW, the game ends at 2050, not 2025. ;)

It can alse be changed in the editor too, under Properties.

And the maximum number of turns is 1000, bringing the end year to 2490ad.

It should be noted that you can continue to play after any winning condition is met, whether you've won or lost. However, you won't be able to trigger any other win condition.

hmm cant find it ingame, I only see the civ rivals , my own civ i can choose and the victory conditions. I have the regular civ3, going to try the editor later today if i can find it lol

I opened the editor but where can I change it??

You need more than just vanilla civ in order to make those changes. I believe the option on the selector screen comes with Conquest, and the editor options were introduced with PTW. I think. They might both be Conquests.
