In a Conquest victory, you take over and/or raze every city of all the other civs. A Domination victory is achieved by reaching control of a certain percentage of landmass and population. So the tricky thing about Conquest victories can be avoiding Domination--one needs to leave a good chunk of empty space on the map.
If you want a conquest victory, simply exclude the domination victory option for once... or raze cities to the ground when you achieve the control of half of the map!!!
I think that Domination was added in Civ 3 because they realized that many people get sick and tired of having to hunt down every last civilization when it's clear that they are by far the most dominant civilization in the world, and could win anytime they want.
I think it's a great idea, as conquest can indeed be so tedious.

For the same reason, I've only had one Conquest Victory, in GOTM10 Mon Cher Napoléon. In order to achieve the Conquest Victory, Joan converted many of her conquered cities into Workers, planted Forests everywhere, posted guards to keep out poachers, then joined the Workers to French cities as full Citizens of the French Republic.
An alternative to razing, at least on some archipelago maps, is to avoid building culture in conquered cities. If there is enough space around and between cities (and note that coast tiles count toward the domination threshold), conquest is sometimes possible without having vast tracts of uninhabited land. (The March GOTM was an example of such a game for me - I didn't even start conquering the world until I had vast hoardes of cavalry upgraded from horsemen, and then I romped all over everyone. Of course the fact that I was playing on a lower difficulty level than normal made that sort of rapid progress a lot easier.) I don't know whether that type of conquest would be possible on non-archipelago maps or not; AIs seem to waste a lot more coast tiles than land tiles.
