I used to always play with yields on in civ 6, but I've found that really isn't as important for civ 7 which is good because it means I can see how pretty the world is (until it gets completely cluttered again in the modern era ).
I played with them on in previous games and did so for my first couple of games of VII, but now I find them less useful. They show up when you need them (placing improvements/buildings) and at other times are hidden to preserve the aesthetic appeal of the map.

Exactly the same for me.
In previous games, yields could be important to find good settlement spots. Now, resources are more important for that, and you can easily identify a good spot without a yields lens.
I have always played with them off. The tile mouseover usually is able to tell me what I need, if I need the info. I may turn them on briefly for some reason to check an area out all at once for settling but once I know the system of the game, I can usually just tell you what every tile yields.
I love maps in general and I have always loved the beauty of the maps in civ. Yields ruin it for me. Civ 7 looks so good too. I do wish wooded tiles were more obvious sometimes. They tend to spill in to other tiles and sometimes I need to mouseover and see if it is a farm tile or a woodcutter tile.
I usually turn them on when I am early game since on game 7-8 I still want to keep an eye on them as I balance choices, and then usually forget to turn them off after that, but then I notice and turn them off, then only toggling them back on when I want to check something.
I find the map surprisingly unreadable, with rough and certain (desert?) vegetated terrain not standing out. I’m mildly colorblind, but am not sure that’s the issue. I play close to a 22 inch monitor and have 20/20 corrected vision. Less related to yields, but I can’t for the life of me see most of the buildings as I play either and so am not getting any more accustomed to recognizing them by sight.
I use the mod that makes undeveloped tiles have smaller yield icons, which was a game changer for me, and is easier to see than what is developed.
