When loading a galley to go explore other continents, which units should I load, settler, warrior, etc?

I think that really depends on what you want to do. If you want to establish a city for future expansion on that continent, load a settler plus spearman for defense. If all you want to do is explore and scout out future places to settle, load in two scouts or two horsemen. If you aren't expansionist or don't have Horsemen yet, just use a couple of warriors.
