If you want to play as an European Civ, just start with the Romans and build cities in the area your empire will settle. Then you remove your units just before the empire you wanted to start with settles, and switch. You can conquer the Roman Empire without much trouble. Just be careful that your empire is stable. If you want to play with France, this is very easy because the Celtic villages can be conquered very easily. With Germany this can be very useful for your UHV's. If you want to play as Spain, build your cities there because Spain is the first modern European country.
Greece is really easy. I played at Viceroy, just build Athens, and if you make sure to have the right civics, you can create over 150 GP points per turn
I did the job in 270 AD, with 2 caravels.
I think these countries, and Egypt, are the most easiest to pass.
