They mean that it's hard to tell the differance between the jar containing the jam and the jam itself. If you had more contrast it would be far easier to tell.
Wood has all kinds of colors. You can have use even white wood, it does exist in nature. (for example birch* wood)
*I didn't know the English word for what I wanted to say. I used Wiktionary but in the picture there I see trees with dark wood, while the word I wanted is a classical example of tree with light wood. Now that I look better, I realize the trees might just be in the shadow of their leafs. I don't know. (the word I was looking to translate is "mesteacan". For anyone who speaks Latin: mastichinus)
