We vary the difficulty level. This month, the PTW / Civ version is Emperor; the C3C game is monarch.
In addition to the difficulty level, we offer three "classes". Open is bog-standard - exactly the same as a normal game. We also have the (unfortunately confusing) named 'Conquests' class. In this version, the human gets a bit of a helping hand in the way of a few extra units and gold at the start of the game (although their final score is reduced by 15% as a penalty). We also have 'Predator' class, in which the AI is given bonuses to make it harder for the players -> extra settlers and units, decreased unit support costs etc. This level is played for the masochists - there is no scoring bonus applied.
