The mongols won't be hard to kill off with the forces we have.
We are fighting on 2 fronts we have massive unit superiority and because cities only take 1 unit a turn so this allows us to send a unit to both fronts every turn - we can ship 2 units a turn with two fronts instead of just one. We shouldn't have much trouble with both the mongols and Aztecs - though we should be hiding in our city and weathering the Aztec attack rather than trying to advance.
The real reason though is because if we move all our units against one, we won't take them out much faster - moving the units is what takes the time. Then we have to ship all the units to the other side of the world - by that time the AI will have grenadiers or rifles, and are much harder to fight. This way we can defeat them both before they get the better troops.
I personally saw no difficulties in fighting both at once and by keeping them both busy we also slow down them getting rifles. We have such superior units, it is not a problem in my mind.
As for china, I would retreat what you can and otherwise ignore them and stay focussed on the two wars we can make progress with. Keep units around to handle landings and make peace as soon as you can.
Not sure why the Romans would be mad at us. Everyone else we have fought.
I personally wouldn't make peace with either the Mongols or the Aztecs. We can handle the unit influx from them if you are careful and don't leave units out in the open in Aztec territory until the initial flood of units subsides.
So my advise is:
Mongols - Go on the offensive
Aztecs - Stay in the city and ship tanks over. Play defensive so you heal.
China - Make peace as soon as you can.
Rome - Continue to build up the border guards so if they declare war, we won't care. We are close or at this point already.
