Redcoats vs Cavalry

My current game is as Willem, Emperor, Fractal, Normal. I posted a save if some of you want to look at it but I am using the BAT Mod. I'll try to give as many details as possible, but I am more or less looking for general advice, not specifically on this game. The same is right after I DOWed. You will see that Hannibal was bribed in.

I spawned on a peninsula with Cyrus to my north. To the south, the peninsula was connected to a larger landmass where you had Churchill, Hannibal and Joae 2. I properly settled my blocking cities to the north and south and managed to expand peacefully to 8 cities. I shared a religion with Cyrus for a good part of the game until I founded confus and managed to generate a prophet in my Moai city.

My goal was to beeline to Cuirassiers and go for a domination victory lazily cap vassaling the landmass.

Here are my general questions:

1. What's the optimal path for the beeline? I won the Lib race handily, which I chose Military Tradition with. On Emperor, when is it a good time to start the invasion?

2. Dealing with England: I took out Persia first, but I am wondering if I should have gone after England instead. My plan was to go for an easy war against Persia while teching to Rifles, get my promos to then upgrade to Cavalry to go after a) the protective Civ and b) Redcoats. I know Redcoats were good but not this powerful.

His Redcoats seem to handle my Cavalry pretty well, although I must say I did start the English war without upgrading all my Curi to Cavalry. I wanted to catch them before Redcoats can into plan.

What are good counters for Redcoats? Mech Infantry?

I assume that generally, wars should be planned around the enemy's unique units and that includes warring earlier or later?

For me cannon spam rules this period. I maintain a couple of cavalry stack for sweeping out pillagers but mostly it's nonstop cannons. Mostly city raider cannons, a few combat cannons, and a few medical cannons. Follow with rifles to garrison/defend stack and mop up. The medical cannons get used to bombard city defenses then heal the stack afterwards, and they rarely get chosen as defenders, plus they are medical cannons
 
Pinch cavalry and cannon work fine. Later, machine guns and artillery. Redcoats are only really dangerous if you lack horses at the wrong era.

While you are at it, you might also want to try nukes and stealthbombers ;)
But what the previous posters said, suiciding some siege units does work in every era on equal tech level.
