how about somthing to do with ship building as they did build ships for thr british navy but yea we do drink to much we use anything to drink even when we lose at football 
also scotland was the oil Capital of Europe but times are hard maybe a college to replace Uni just because of are driffernt Education in scotland i dunno just give you some ideas

I've already done it with a tavern. Replaces market, +35%

with wheat. Plus, you Scots don't have a monopoly on alcohol, we consume a fair bit south of the border too. However, you do have the monopoly on deep fried Mars bars
