I usually go for iron if i start with bronze, u can get a huge military edge and aqquire the iron before the AI
 
Ceremonial Burial --> Bronze Working --> Alphabat

Ceremonial Burial: You need the temple to have a city of size 3 (to build settlers) without going into disorder on Regant levels or higher.

Bronze Working: Defence is very important

Alphabat: Start the pursuit of sicence

I voted Alphabet.

But it actually depends on what civ I start with. I usually start researching the next level tech available to them.

As for the starting techs, I try to make contacts with as many civs as possible and trade for them.
