I think it would make sense to have an Immortal/Deity game each month, and a Prince/King game each month. That way, the players who are more new to Civ (or Civ5) can still enjoy the GoTM experience without boring Tabernak and some of these other hardcore guys. :-D
Also, you could switch it up to G&K only with one of the games, and DLC for the other. That way, again, people who don't have DLC are never left out, and those who have all of it (guilty) get to play all the fun new civs.
Extra credit: Throw in a Vanilla scenario game here and there so some of us can have a reason to go back and get those stupid achievements. I want them but I'm completely unmotivated to play Vanilla, which is a requirement for a lot of those scenarios. :-(
