I am sure it is not the best UU, but I have been playing with the Enkidu Warrior and it fits my play style well. I go all out for republic, hoping to fend off war until then. At 10 sheilds and 7 "power points" it is very easy to have enough power that the AI do not decide to make war with you early. Then you can get into republic and your golden age and go on to will with the scientific warmongerer strat.

For me, i think the most important part of a UU is a well timed GA.
Very possibly it is not as important as i feel it to be, but a UU that comes in despotism, i will not use no matter how good it is. I dont want despotic GA. I mostly prefer GA in early middle ages, so all knight replacements are good UU's for me. Swiss merc is also a very good UU for me. While in "normal" warfare speed and attack strength are by far the most important stats, on high diffulties it always comes down to bombardment for me and in those stacks, the defensive unit is the most important.

Anything fast available during ancient/ma gets my vote.
Top choice for me is Mounted Warriors, at least on continental/pangaea maps. Iros used to rock in vanilla/PTW because of that UU alone. The chaps are cheap for a fast A=3 unit and are available fairly early. Even so, they could be used lateron as knight ersatz if short on iron.
Iros' new traits in C3C come in like the cherry on the cake.
Having said that, I'm actually playing Byzantines on an archipelago. I haven't had horses nor iron and that Dromon fire really cleared the way for the archers.

The rider. This speed-demon can mop up a continent quicker than you can say Sun Tsu's Art of War. Besides it comes in exactly the right time to trigger of a GA.
