Just War: +20% Combat near enemy Cities that follow this Religion
Messiah: Prophets 25% stronger and earned with 25% less Faith
Missionary Zeal: Missionary conversion strength +25%
Religious Texts: Religion spreads 34% faster (68% with Printing Press)
Religious Unity: Religion spreads to friendly city-states at double rate
Reliquary: Gain 50 Faith each time a Great Person is expended
 
Well for me I usually Found Christianity or Judaism If the Civ i play is Christian, Shintoism if i play Japan and Islam if i play Arabia or Songhai

If im the First to found a Religion I always Choose Church Property (+2 Gold for each City following Religion) as A Founder Belief, giving me a large amount of Gold per turn when I Enter Renaissance Era. But if Church Property is not available Ceremonial Burial( +1 Happiness for each City following Religion) would be also great.
Then the first Follower would be Pagodas (Use Faith to purchase Pagodas (+2 Faith, +2 Culture, +2 Happiness).Pagodas is Perfectly Balanced Building to buy 2 faith , 2 culture and 2 happiness.
The Second Follower Belief would be Cathedrals (Use Faith to purchase Cathedrals (+1 Faith, +3 Culture, +1 Happiness, Artist Specialist slot) or Mosques( Use Faith to purchase Mosques (+3 Faith, +2 Culture, +1 Happiness)
My enhancer would be Just War( +20% Combat near enemy Cities that follow this Religion) Perfect for a Warmongering Leader like me.
 
Pantheon, Follower, and Founder beliefs are all situational for me. In a vacuum, I really can't pick a pantheon, but I'f take the tithe founder belief and religious center and feed the world as followers.

For the Enhancer, I'll normally take holy order so long as it is available, and it generally is. There are very few exceptions where I'll take another belief in it's place when it's available.
 
Pantheon: really depends on the map, generally something to increase faith production, or if stuck between alexander and attila maybe goddess of protection or faith healers.


Religion:

Church Property - I've found this one to be far better than tithe, it kicks in earlier and is guaranteed income, whereas tithe you have to wait for a city to reach population 4 just to get +1 gold and then have to wait for population 8 for +2 gold (which breaks even with Church Property), so only cities with 12 population will be giving you more gold than Church Property, which will come later in the game generally, I'd prefer getting the gold bonuses earlier.

Pagodas - happiness, culture, faith production - oh ya
Just War - nice bonus, again could switch it out for defenders of the faith depending on my geographical location/neighbours etc, just war is the more fun though.
Holy Warriors - this one's pretty great, for obvious reasons.

Spanish game recently, found Sri Pada and Rock of Gibraltor, to get the gold bonus for both, bought a settler and settled to get both in my second cities borders, worked both tiles and had insane faith production/gold/growth, spread my religion to every city on the map and went on a conquering spree, barely having to build any units myself and having pagodas in every city. I really underestimated the Spanish tile yield bonus, it's probably the most powerful thing, but as others say, based on luck, conquistadors and tercios are much better than expected also, I may have found my new favourite civ.
 
Pantheon situational
Founder - Tithe, Church Property, Ceremonial Burrial, whichever I can get
Follower - Religious Building, Mosque if going for Holy War, Cathedral if going for Cultural Victory, Pagoda if going for anything else; The rest is situational
Enhancer Belief - Itinerant Preachers or Religious Texts are first and foremost favorites.
If playing Byzantium, Both.

I agree about the relative timing of gold from Church Property vs. Tithe, but I don't believe your description of Tithe is correct -- it's stated to be 1 gold for every 4 followers. Although I haven't been super-precise in measuring this (by, say, hovering over each city's banner and counting followers), I'm pretty sure those multiples-of-4 followers don't have to be in the same cities. I tried to track this (kind of sloppily) in GOTM TSG 47 (where my religion eventually became the majority in every non-holy city) and it appeared that Tithe overtook Church Property about 80-100 turns after enhancing. But, the later game advantage wasn't as large as I expected (mainly because Greece and Sweden conquered everyone except me, which knocked down many cities' populations in the later game and, therefore, knocked down my yield from Tithe). And the timing of gold is potentially more important than the overall amount, so I plan to try Church Property again next game.
 
I usually go for a very production focused Religion, ramping up my war production.

Japanese TenticleMonsterism

Pantheon - Usually try to go for something Faith-based, like Dance of the Aurora (+1 for un-forest tundra) or Stone Circles (+1 for stone/marble). I often get surrounded by Jungle, though, in which case I'll take Sacred Path (Jungles produce culture), and produce my Faith other ways.

Founder - Ceremonial Burial. I need the happiness.

Followers - First the something community one that gives +1% production for every follower, then Guruship (Production increase for cities with specialists), since I rarely am running specialists before my second Great Prophet appears.

Enhancer - Just War. I'm Japan; this is a given. I've only been beaten to it once (by the Celts). Can't remember what I took in that game. Except the Celt's capital in rage.
 
Founder: Tithe/Ceremonial Burial - I think people are missing the point of Tithe. You do NOT need a majority in cities for Tithe to work. That alone gives Tithe an edge over Church Property. In the first instance where the religion is founded, your capital likely have 8+ population already, so each starts with +2 gold. However, it usually takes time for the second/third city to reach majority. Meanwhile, Tithe is already working by having 4/8/12/16 citizens spread in different cities (yet there's no majority). And then there's the longterm advantage which is obvious.

I assume Church property can be great for lower difficulties since the AI has less growth bonuses. But when you got cities with 8+ pop already at that stage, it actually takes longer for Church Property to have its effect than Tithe unless you're really flooding with Faith.

Follower 1: Pagodas/Mosques
Follower 2: Depends. Maybe another Mosque/15% production/food for shrines/temples.
Pantheon: Totally dependent on terrain.
Enhancer: Itererant Preachers works wonders with Tithe. I managed to spread to 45 cities by my end game with my culture game with Ethiopia last time, with only 1 Missionary and one GP. I would only take Religious Texts if I actually have many cities close and have some serious competition with neighbours.
