First, there's a patch to bring Civ3 up to version 1.29 level, which adds a few extra useful menu options like wake all/fortify all, and fixes some nasty bugs in the 1.24 and 1.21 versions. It's currntly a beta version - 1.29b2 - and available in a threadd near here. It's stable and highly recommended.
Second, there's a scenario and map editor. You can only run the editor with the version 1.21 game software, so you need to keep a 1.21 copy if you are into editing maps and scenarios, but the resulting games can be played in 1.29 as I understand it. Again, you'll find a thread with a download link in this forum.
Then there are some ready-made maps and mods that are developed for version 1.29, and work fine with the Mac version as long as they are not buried in PC installers - .exe files. Look around the customisation forum.
Last but not least there's the Game of the Month competition. You can play along with that using version 1.29. GOTM has a forum and a complete web site - http://gotm.civfanatics.net/
The Play the World and Conquests packs have not been released for the Mac version, and you'll find some threads hereabouts speculating about whether Conquests will happen before or after hell freezes over.

It's nearly done... a few more weeks, however my hard drive has been on the blink over Xmas and I have been frantically backing-up and restoring data to a new computer, about 75Gb worth(!!), so apologies for the delay!

Hey Fruno, it sounds as if your customer queue is lengthening. Good luck with that hard drive.
If you create the file set in the same directory structure as it lives in when it's installed, it should work with my drag and drop installer without any need for a special installer or detailed instructions on manual file placement, It works for any mod set within reason, not just GOTM file sets (it's OS X only, though). A suitable folder structure inside your .zip file would be:
