Workers

I have beaten the game on Monarchy and I thought it would be fun to play on sid....bad idea. I had 2 citys when they had over 5. Some had said if I just let the workers just work the land I lose speed in production and pop. So, I would like to know if you guys know what does the best for each terrian.

I think the most common answers that you'll get to that are:
1) It depends; and
2) The rule of thumb is mine green, irrigate brown.

The rule of thumb is a good starting point, but there are lots of variables. What government are you in? What are you planning on doing with the city in question? Will it be a military producer or a specialist farm?

I wanna be russia (havent beaten it with them yet) sceince and expansion is good. I want to get to the Russians UU and then war intil I kill off a few civ 3 max. Then ride low and war again and again. facism is my gov

Fascism is not going to be your best bet for excelling at science. That said, roads add commerce, which will speed up your science, so build lots of them. Irrigate food bonuses, mine hills, and otherwise look at each city and decide what the empire needs it to have.

Wine, say I have wine on a grassland do I mine or irrigate

Probably irrigate, because wine has both food and commerce bonuses. OTOH, in some instances, mining might be appropriate if it will make your city hit a "sweet spot" in terms of food and shield production.
