Recently I have been introduced to an ancient (1993) PBEM called Adventurer Kings and I am totally hooked! 
It's a hex based strategy game where you conquer a fantasy world. Lots of diplomacy with 10-20 human players and some rpg elements as well.
We send in our orders in every week by email and get the results a few days later. You cannot imagine the feeling when you just received your turn report and find out how your battles turned out.
Just like Christmas morning!
There still is a small player base around and they recently put up this site to attract new (and old) players:
