Best option for Farming

Ok - So I'm still a bit new playing on Regent Level in a large world. Is there a standard optimized rule for farming land? Like what to do on a grass land, verse plain, verse plain with tobacco, etc....? I find myself doing a lot of mines and rail roads but want to go into higher levels and know I will need to optimize my workers if I want to succeed. Please let me know.

You are looking for Cracker's Opening Plays. That tells you all you need to know about managing opening worker turns, and once you understand that, you'll be able to better make any adjustments you need for the later game. Most of the late game stuff (over-mining irrigation, irrigating over a mine, optimizing production, planting forests) is just variations on the themes you'll learn from Cracker.
