Bananas typically remove the production from the plains tile they became when the jungle is chopped. Also jungle sucks.

I could see a factory bonus on the late game ones yes. Its not a huge priority on alum/uranium.

I didn't give strategics that bonus because it would reveal there's a resource on the tile for anyone who hasn't discovered the resource.

Another example of very intuitive coding by Firaxis? Doesn't really make sense. Though I'd put that bug in the category "well, you just can ignore it and avoid benefiting from the bug".

Yields on Factories for Late Strategic Ressources sounds fine.

Why are bananas so good? I mean, yeah, they taste incredible, but isn't wheat more historically important for growth?

I'd guess it's simply a balancing fact for jungle regions? Didn't calculate the numbers though.

Bananas also give -1 like mystikx mentioned. I should have subtracted that in the table. I've done so now.
