changing unit names and changing technologies

'How to do it? I'm not talking about renaming units in-game, I already know how that works
I'm talking about, for example: permanently making it so that Great Prophets are called Great Priests, or something. How can this be done?

And about the technologies: I wanna switch certain technologies from their place, like making Monotheism not require Polytheism or switching Monotheism with Meditation so that it comes after Polytheism


I'm thinking this requires some programming, but I have no clue where to start, since I'm essentially a total newb at this
