Civ6 GS map types?

Does anyone know if all the map types like continents, highlands, etc are updated to create Gathering Storm compatible maps in Civ 6 GS, or do they create maps for the standard rules (the original, base game)?

Yes. Most maps (at least base game and Rise and Fall) create a GS version of the map when the GS ruleset is enabled. It does not work the other way around, Continents and Islands is GS only and you can't play it with Standard rules.

Inside the files, the expansion has its own map scripts for generating maps for GS rules. It might mean that maps like TSL East Asia from the Indonesia and Khmer pack don't have a GS version, but I never play TSL maps so I don't know.

Highlands is a NFP map script and it should be compatible with all three rulesets.
