It has sometimes happened that two of my neighbors on different sides of my borders will want to go to war. What is the best strategy to exploit this situation and remain safe?

It depends on the exact circumstances of the game, but if you're going for a peaceful game and you have military-minded neighbors, as a general rule of thumb I would say try to stay on the good side of strong civs that are close to you. If they're both on your borders, it may be wise to go with the stronger of the two. If you stay neutral, you may just end up damaging relations with both, only to have them gang up on you later. Do you have the defensive capabilities to bunker down and declare war on the weaker neighbor?

Bribe your neighbor A to attack neghbor B. Help him finish off B. Then turn around and finish off neghbor A.

Move your troops to the border, and get them in position to blitz one of the neighboring cities. When your neighbor moves his army to the war zone (or the war zone moves on top of his army), declare war and take the city.

Build a few units and place them around your borders. If you support one of the two neighbours, and are exactly in between the two, don't accept Open Borders with the other one. That way he has to either stay in his own area or go around yours. Then when one civilization is defeated, hit the other one. :P
