Greece is going to snowball soon and let's hope that your prediction doesn't come true and Egypt bogs you down. You will an interesting mid game where you have to act quickly. Greece will make your CS alliance very shaky since you have to compete with him a lot. As for Askia, he's not as dangerous if he didn't snowball early game. I had way too many games where he just eats all his neighbors by Medieval Age and it's so hard to catch up to him.
For Medieval Era, the important techs and Wonders are heavily dependent on your victory condition or goal. Theology is a must if you are pursuing a religious game and want to dominate with your religion. Chivalry, Steel, Physics and Machinery for wars on the land. Guilds and Compass for naval wars (and Hanse which you want asap). Meanwhile, you have techs for your policy tree where Education for Tradition, Civil Service for Progress and Chivalry for Authority. I personally like this age because it's when you can time a war with really strong units. Of course, it's also an era where, if your opponent hits it first, your wars are going to be a nightmare.
For you, it's annoying because you need a military to fight Egypt so that delays you from getting Civil Service. I wasn't paying attention to what civ went what policy but I think Forbidden Palace is going to help you a lot by saving you a lot of gold in the long run.
